Tarragon Gin Rickey

Ingredients

* 2 ounces gin
* 1/2 ounce lime juice, freshly squeezed
* 1/4 oz. butterfly pea flower simple syrup
* Club soda, to top
* 1-2 Sprigs tarragon
* Garnish: lime wheels & tarragon

Method

* In a highball glass muddle tarragon
* Add gin and lime juice.
* Add lime wheels and ice
* Top with club soda.
* Add butterfly pea flower simple syrup and stir
* Garnish with tarragon
